Mexican Chicken and Rice Casserole

This recipe is similar to my Mexican Chicken Casserole except it is a little heartier and more of a meal in itself. The onions and peppers stay a little crunchy and add great flavor. I used a cilantro flavored rice and it was a great addition. A rotisserie chicken from the grocery store works well if you don't want to cook and shred the chicken breasts.
