Veggie & Ham Quiche

This healthy Veggie and Ham Quiche is simple enough for everyday and pretty enough to serve at a brunch. A great combination of veggies and protein will have you making this on repeat. Printable version at bottom.


Variations: Country ham instead of baked ham. 6-8 slices crumbled bacon instead of ham. Shredded sharp cheddar instead of feta for a cheesier consistency.

A beautiful and healthy quiche ready to serve for your next brunch!

The Ingredients:

  • 8-10 stalks asparagus

  • 3-4 spring onions

  • 3-4 slices baked ham

  • 1 cup cherry tomatoes

  • 1-2 handfuls fresh spinach

  • 1 small shallot

  • 1/2 cup feta

  • 6 eggs

  • 1/2 cup heavy cream

  • salt and pepper to taste


To Make:

  1. Preheat oven to 350

  2. Grease a small casserole dish (about 2 quarts)

  3. Remove ends of asparagus and cut into pieces. Dice the spring onions and ham. Halve the cherry tomatoes. Chop the spinach. Finely dice the shallot.

  4. Lay all veggies in the casserole dish and sprinkle the feta on top.

Place the cut up veggies and ham in the dish and top with the feta.
  1. In a small bowl, whisk together the 6 eggs and heavy cream. Add salt and pepper. Pour the egg mixture over the veggies and ham.

  2. Bake uncovered 30-35 minutes until the eggs are firm and set in the center.
