PROUD MOMMA!! Official signing day! What a joy it is to be your mom! I am so proud of your focus and determination both athletically and academically. The goal was to play baseball in college IF it aligned with the right school fit! I am so glad we made that quick trip in June and you found your school and the coach found you! Persevering through multiple AP classes during baseball season paid off to! So proud of your academic scholarship to boot! Your future is bright and we are just so proud of you, you character, and your faith. And to make the day extra special, his sweet GF also had her signing day for being a rockstar lacrosse player!

Gameday Nachos! If you can’t make it to the game in person you are going to need a good snack watching at home! @latejulyorganic are my fave chips!

INGREDIENTS
• 1 pound lean ground beef
• 1 packet taco seasoning
• 1 12 ounce bag restaurant style tortilla chips
• 1 15 ounce can black beans, drained
• 1 jar salsa con queso
• 1/2 cup shredded Mexican cheese
• 2 jalapeños, seeded and diced
• Optional: sour cream for garnish
INSTRUCTIONS
1 Cook ground beef and taco seasoning until cooked through.
2 Add black beans at the end and stir to warm
3 Heat salsa con queso in the microwave for 2-3 minutes. NOTE: heat in a microwave safe container as the jar will get too hot to hold
4 Spread the chips on a serving platter. Sprinkle with the jalapeños and shredded cheddar.
5 Top with the ground beef and black bean mixture.
6 Then top with the salsa con queso.
7 Serve immediately

Easy & healthy go to breakfast! Keep an assortment of fresh berries prepped in the fridge. Combine one serving Greek yogurt, top with 1/2-1 cup assorted berries, then top with 1/2 cup granola. To make it super sweet drizzle with honey. Packed with protein and fiber to get your day started. Thanks to my hubs for starting this trend in our house!

The other night at about 8:45 I was about to go ahead and go to bed. It had been a rainy day and I was tired. I decided to go upstairs and see what my son was doing because I didn’t hear him gaming. I walked in and asked him what he was doing and he said, “Do you think Panera is still open, I am craving mac-n-cheese?” I responded that it probably was but that I would be happy to make him mac-n-cheese. (As my son has said before, our house is an ingredient household so there isn’t instant or box mac-n-cheese. It’s homemade.) His eyes lit up and he followed me down the stairs to the kitchen.

He sat down at the kitchen island and we just chatted while I got the water boiling and started mixing up the cream cheese, heavy cream, butter, cheddar, and parmesan. I was standing at the stove in my PJ’s tending the pasta as we talked about little things like his upcoming college application, his summer workouts, and his plans for the next day. My momma heart was so full in this moment. It was like a scene out of a movie. Momma making mac-n-cheese in her PJ’s while her nearly grown son hung out with her.

I was seeing a toddler on the other side of that kitchen island waiting for his mac-n-cheese though. A boy that has grown up way too fast. A boy that will be packing his things and leaving for college a year from now. I could have just said, “Panera is still open. Drive safely.” But I am so glad that I made the mac-n-cheese.

My CRAB CAKE Recipe! Perfect for summertime suppers! Be sure to Save and Share! Tip: use @carrs_uk Rosemary crackers!

Ingredients:
1 pound crab, backfin or lump
1/2 cup mayonnaise
1 tbsp dijon mustard
1 tsp hot sauce, I use cholula
1 tsp worcestire
1 egg, beaten
juice of one small lemon
1/2 tsp black pepper
1 cup crackers, crushed
1 tbsp parsley

INSTRUCTIONS
1 In a large bowl, combine all ingredients until thoroughly mixed.
2 Use a 1/2 cup measuring cup and scoop out the cakes, filling the cup to almost full.
3 Let cakes set in fridge for at least 4 hours (you can make the day ahead)
4 In a skillet, heat olive oil or vegetables oil over medium heat (medium low if using a gas range). Cook the cakes in the hot oil until golden brown on each side. About 4-5 minutes per side.
5 Serve immediately.
