Black Bean & Avocado Salsa


This salsa is not only delicious but so versatile! Serve it with chips, over a salad, or top fresh fish or grilled chicken with it. If you want to kick it up a notch, use 2 jalapenos instead of just 1!


Ingredients:

1 15 ounce can black beans, well drained

1 15 ounce can sweet corn, drained

1 tomato diced

1/4 cup red onion, finely diced

1 jalapeno, seeded and finely diced

1 tbsp fresh lime juice (about 1 lime)

2 tbsp cilantro (freshly chopped)

2 avocados, cut up


Put all ingredients in a bowl and mix thoroughly. Serve immediately!
